One between the legs is very popular (pillow that is). When I had my hip replaced, that was how I was told to sleep. I was already doing this, so it came as a no brainer. People with sleep apnea may find using 2 pillows under the head might help. I use to do that till I kept waking with horrible headaches and found my neck was not aligned properly, causing me problems. Pillows are a big business. I recently went into Bed Bath and Beyond to replace my pillows and found the choices so overwhelming it gave me a bigger headache.
Sleeping with something between our legs seems to be a common theme.

Three to start the night, two feather pillows and one foam. The foam pillow I place crossways to the feather pillows when I go to bed and read, but as soon as I hit the light, I toss the foam pillow on the floor and sleep on the two feathers.

For me, it depends on the size/quality of the pillow and also whether I have someone next to me, but I'd say usual is two, both under my head.
